Sumava 'Black Moon' – Costa Rica

To celebrate our ten-year partnership, we asked Francisco to showcase his most innovative coffee processing techniques. His answer: Black Moon, a method first developed during a solar eclipse, which inspired its name.

This Villa Sarchi microlot comes from one of the highest altitudes in the plantation, where this smaller variety ripens slowly and the sugars develop gradually. The Black Moon treatment reflects this philosophy of slowness and gentleness: the cherries are left to rest, then placed in fermentation tanks with their mucilage intact and in cool conditions.

The result is a refined taste reminiscent of fine cognac and dark fruits. Black Moon celebrates innovation, friendship, and the enduring bond we share with Sumava de Lourdes and Francisco Mena.
