What is specialty coffee?
The Specialty Coffee Association (SCA) defines specialty coffee as Arabica coffee whose cup achieves a minimum score of 80 points on a 100-point rating system. The coffee must be tasted by a certified Q-Grader ( Quality Grader ); that is, a person who is trained and accredited to rate coffees according to standards developed by the Specialty Coffee Association of America (SCAA).
Our supplier and partner, Pilot Coffee Roasters, only sources coffees that have received a rating of 84 points or higher.
What is direct trade?
Direct trading involves working directly with producers who share their high-quality specialty coffees with the roaster. It is a sourcing philosophy that emphasizes authentic relationships, mutual benefits and full transparency between producer, roaster and consumer. Thanks to direct trade, we know that the amounts paid when purchasing coffee go directly to partner producers. Regular visits to different producers by Pilot Coffee Roasters team members on site allows them to ensure that each coffee purchased has been produced ethically, sustainably and with the highest level of care and skill .
Although direct trade is not always accessible for a variety of reasons, most of Pilot's cafes meet direct trade standards. Look for the direct trade icon on coffee bags to know when this standard has been met.
How do I determine the grind of my bag of coffee?
To make sure you choose the right version, all you have to do is ask us. We will be happy to guide you according to the type of infusion you prefer and the machine used.
Rest assured, as roasters, Pilot targets the sweetest point in each coffee’s development. This point is typically achieved by a light to medium roast, which produces a clear expression of each coffee's unique profile. This philosophy - known as omnibus roasting - gives you the opportunity to enjoy their entire range of coffees through any brewing method: from filter to espresso!

For orders in Canada, we do business with Canada Post , according to their rates.
Can I order online and pick up locally?
Of course ! Simply choose the “pick up in store” option when paying for your order. You will receive an email confirmation when your order is ready and you can come to the store to collect it.

Returns and exchanges
What is your return policy?
We do not provide refunds for purchases made on fauxmouvement.cc. If you wish to return a product, we will be happy to exchange it for a product of the same value, according to our exchange policy.
Is it possible to exchange a product?
Exchanges are made on regular priced items only. If, within 14 days, you wish to exchange an item, contact us ( info@fauxmouvement.cc ) to begin the exchange process.
Only products in new condition, which have never been worn or washed, are eligible for exchanges. We reserve the right to refuse any product that does not comply with these conditions.
The return and reshipment of exchanged items are at your expense.
