This is the latest work from producer Roger Hidalgo. Anaerobic is a fermentation process that has gained popularity in the natural wine and specialty coffee circles. It simply means “without oxygen” and allows sugars to slowly break down , but the result is anything but simple. Roger's brilliant, rebellious approach isn't for everyone. It may take a few sips to "get it." But in a way, that's the point. .
